Weekend Recap + Brian's Famous Grilled Chicken
A quick recap on my favorite weekend of the year and Brian's incredibly good grilled chicken

What a weekend!! It was one of those soul-filling, wholesome and happy kind of weekends and just what I needed! I left the office on Friday and declared, “Guys, I’m going to try not to work this weekend!” - everyone laughed but guess what!? I proved them wrong. Rest is soo important for my well-being and I’m learning to channel it as a priority in this phase of life.
A quick weekend recap before we get into Brian’s chicken! We had softball on Saturday which is so fun to watch, my parents came and we were all freezing on the sidelines (it was unseasonably cold this weekend). We did lots of swimming at our pool with neighbors, gardening, playing games (this is such a fun one!)
Our town does the CUTEST most wholesome Memorial Day parade, which is one of my favorite traditions. We all gather in the neighborhood, make mimosas and walk over as a big group. There are times when I look around and could cry seeing all the kids together and their joy and excitement watching all the floats go by. It’s such a nice way to pay tribute to all those who have sacrificed their life for our freedom, a message that runs through the whole parade and day.
We had my friends from college and their families after the parade and spent the day by the pool. My parents came, too, and it was so fun recounting our stories from years passed. I went to bed that night feeling tired in the best way, filled up and grateful for it all.
And now, of course, it’s time to get back into the weekly routine and figure out what’s for dinner. Brian’s grilled chicken is NEXT LEVEL. It’s juicy and so so tasty I could eat it every single day. Recipe below:

The Chicken:
This is Brian’s go-to. He filets boneless chicken breasts so they cook quickly and stay juicy, then gives them a quick marinade that’s packed with flavor.
Marinade:
Juice of 1 lemon
2–3 tbsp olive oil
Salt + pepper
A generous shake of Kinder’s garlic & herb seasoning salt
A generous shake of Kinder’s Lemon Butter Garlic seasoning
Instructions:
Filet chicken breasts so they’re evenly thin (or use thin-cut breasts).
Toss into a Ziploc with all marinade ingredients. Let sit 10–20 minutes (longer is fine if you’ve got the time).
Grill over medium-high heat, about 3–4 minutes per side until just cooked through and lightly charred.
Quick Rice Pilaf:
While the chicken’s grilling, make a simple rice pilaf:
Sauté a little onion in butter or olive oil, stir in 1 cup of rice, then 2 cups broth (chicken or veggie).
Add a pinch of salt, cover and simmer for 15–18 minutes until fluffy.
Serve with: a big green salad, grilled veggies, or sliced cucumbers + cherry tomatoes tossed with lemon + olive oil.
